Cottage Cheese Queso 🎉
Okay, friends… this one is a game changer. If you’ve ever wanted queso that’s creamy, high protein, and super customizable, look no further. This Cottage Cheese Queso (aka Protein Queso) has officially stolen the show at our house.
You know the drill, if it is not ridiculously simple, it isn’t happening. We are never going to be throwing any Michelin star recipes at you, we keep it easy! Like, “throw it together while the kids ask for snacks” easy.
How We Ate It
- The kids dipped tortilla chips
- Brandon and I went the salad route
- I ate leftovers with roasted potatoes and salsa
- You could throw it on a baked potato, inside tacos, or eat it straight from the bowl – no judgment here!
Ways to Switch It Up
- Add a can of Rotel for a little kick
- Swap ground turkey for a leaner option
- Skip the shredded cheese if you want to make it lighter. I did one night and didn’t even miss it!
This queso is proof that eating in accordance to your goals doesn’t have to be boring OR complicated!
